New Years celebration at home

New Years day was fairly normal here. We tried another moose recipe in the instant pot. I’m really starting to enjoy that particular appliance. We put a frozen moose roast in it. Lynn put together a broth to cook it in and two hours later it was done. No knife needed, you could cut it with your fork! She also made some Scottish Oatbread and I also steamed some broccoli and potatoes to go with it. Perfect meal for us. Since it was also a scheduled workout day we continued with our training plans.

Work goes on

I’ve been really busy at work as usual. Putting the finishing touches on the holiday maintenance for the computers and now I’m pretty much ready for the start of the new semester. Hopefully once we get back into the routine I’ll actually be able to relax a bit on the weekend. Teachers go back to work tomorrow and school starts back on Wednesday.

Races scheduled for this year

At this time I’m scheduled to participate in three races this year. I’ll be doing the Edinburgh Marathon in May, the Anchorage Mayors Day Marathon in June and of course the Hoodoo Half in Fairbanks in October. Its a pretty full schedule for me but it gives me something to focus on in my training. I’m still trying to run outside as much as possible.

Thats pretty much all for this week

I had in mind some nice photographs to take this week but the weather just refused to cooperate. I’ll get a break soon I hope. I know this was a short post this week but there should be some light at the end of the tunnel. Weather is still on the moderate side for this time of year. It was -18F while I was running today which is actually pretty warm for this time of year. I’m thinking about including a page on this site with some of our recipes that Lynn and I make. If anyone is interested drop me a line. Thats about all for now. Happy new year to everyone and stay warm!

  1. Sounds like the marathon training really keeps you busy! Enjoy the heat wave while you have it! LOL! You’re New Years dinner really looks delicious. I would love to try some of your recipes. With beef or pork of course! Take care , be happy and enjoy life. Pam 😀
